Yummo! Tried a new food today

I decided on Saturday that we would try eggplant. This may sound stupid, but those things scared me. I wasn't sure what they taste like or how to cook it. I went on the hunt, and this is the first meal we tried. I think we decided that it would be great with some bacon or chicken. I kinda liked it vegetarian style but I am fighting my spouse tooth and nail for more healthy eating, so I guess it is just baby steps right now.



Eggplant con Queso
1 eggplant, peeled & diced
1 c shredded cheddar cheese
1 c diced toasted bread, cubed
1/2 c heavy cream
1 TBS flour
1 tsp poultry seasoning

1. Preheat oven to 300 degrees
2. Cook eggplants (the original recipe said to boil them but I decided to roast mine because my kids don't like squishy foods)
3. Mix in 1/2 c cheese and bread. Spoon into small casserole dish.
4. In a small bowl, mix together cream, flour, and seasoning. Pour over eggplant & bread mixture.
5. Top with remaining cheese.
6. Bake for 30 minutes.
